I set the heat much lower than normal on my glass-top range (between low and medium) and after about 5 minutes of preheating the griddle was ready to go. The griddle cooks beautifully. My first test was pancakes: I wiped the hot griddle with oil on a paper towel and had no problems flipping even after a couple of batches. For cleaning, while the griddle was still warm (not hot), I pushed a paper towel around the griddle with the spatula to pick up excess oil and residue then went over the surface again with a wet non-scratch Scotch-Brite pad with a drop a soap and rinsed. The instructions advise you can use a metal cleaner to restore the original luster. I've used this griddle 3 times and really like it. This griddle is slightly narrower than my old one but I'm so glad to get rid of the last piece of Teflon in my cookware.

It is a perfect fit for my glass cook top stove. The griddle is heavy but has not scratched the glass top. My cook top has a bridge and the entire left side heats up the entire griddle. Our pancakes have been cooked beautifully. Steaks and meats have also cooked to a fine restaurant quality. The oddly placed handles and pouring notch make removing grease safe and easy. Clean up has been easy. We have used a spray olive oil before cooking to help prevent foods from sticking and as an added health benefit. Initially, I thought the price was high to purchase this griddle. But, really it is a lifetime investment and will serve us a lifetime of delicious fine restaurant grilled foods at a fraction of the cost. I am enjoying cooking grilled foods and I am really enjoying eating them!

I really should have analyzed the dimensions better. I find the picture to be deceiving. Two burgers or two pancakes fit side by side on the griddle only if they are extremely small. Most griddles are at least 12 in or wider - this one is only 8 in wide of cooking surface once you account for the lip. The material, however, is wonderful. VERY hard to find a healthy material in griddles without PFOAs, etc. I'm thinking I'll either buy a second one to accommodate the size needed to cook a decent quantity of pancakes, or return it and stick to 4 frying pans which is how I make Sunday morning pancakes now.
