You know when you dream of owning something. I had a small dream... a copper frying pan. They look so nice. I dreamed of reaching new culinary heights that I just couldn't find with my stainless pan. This pan doesn't fill that bill. The good: It is beautiful. It is solidly built. I will pass this on to a loved one someday. I love the copper -- I love it after I clean it, I love it when it is tarnished, I love how it looks on the rack. I love how it cooks. More on cooking: it holds its heat. It heats evenly and I don't notice any hot spots anywhere on this thing. The stainless surface is great and can handle being scraped, burnt, food stuck on it, left in the sink full of water, etc. The kinda bad: This thing is a tank. It may outweigh a tank. It is absurdly heavy. Lifting it to empty the contents is a two hand affair. If the pan needs to be scraped out, you will need someone to do the lifting and another to do the scraping. The weight of the pan is a running joke in our house. And, don't even think it... I'm no wilting flower. The handle angle is a bit on the high side. It is just on the wrong side of comfortable. I have worked in professional kitchens for most of my life. You want to be able to saute by grabbing the handle and tossing the food. The weight of the pan combined with the handle angle, make this pan more of a wooden spoon pan vs. a saute pan. If I had to do it again, I wouldn't buy this product. For the price, I deserved my dream.
