Got this delivered today. I made braised boneless chicken tenders with celery, carrots, & mashed in a red wine/tomato sauce. I first browned the chicken in the pan with a little olive oil & butter. I then added the veggies and wine/tomato sauce. I cooked on medium/low with the cover on for 15-20 minutes. The chicken was very moist & tender. This pan is perfect for braising - just make sure to keep the lid on to retain the moisture.
