Wasn’t sure what to expect when purchasing the All-Clad Enameled Cast Iron Pan. After using it the first time, I fell in love. Not only does it cook amazingly, the clean up process is so easy. I plan to use this pan often and I highly recommend it.

Beef stew was my first recipe in my new braiser. I made one-half of a recipe which called for 2 lbs of beef, with reduced amounts of vegetables. The braiser was about one-half full and resulted in five cups of stew. The pan heated rapidly on a ceramic stovetop. I did have a little trouble regulating temperature down to simmer from medium high heat, but I think I just need more practice. The beef turned out very tender, and the veggies cooked to perfection. I do think the domed stainless steel lid is a little lightweight, but it performed well in keeping moisture in. In two hours cooking time, I never needed to add water. I think this pan is a good choice when you don’t need the size of larger cookpots.

Excellent addition to our All-Clad collection! This is a beautiful piece! The black enamel on the outside of the cast iron allowed us to use it on our induction cooktop without worry. It effortlessly took our one pot meal from the cooktop to the oven and once we’d finished our meal it was so easy to clean. We can see this becoming our favorite piece of cookware!

I like the thickness and depth. Great for braised short ribs. Two big handles make it easy to move, even when full. Lid fits well and keeps the condensation in, if you want.
