This has been my only knife for everyday, general-purpose use, for over 4 years. It is perfect size for my hand, and for how I cut. This is a premium-priced product, owing to the MCD67 steel, so let me focus on that. It is very sharp, but it does not stay sharp. Assuming that you have a couple synthetic sharpening stones (costing as much as this knife), and that you have a disciplined sharpening technique, including being able to precisely control the angle of attack against the stone, and being able to sense the condition of the cutting edge from how it glides, you will be able to restore a sharp and symmetrical edge, that will slice through paper. But in a month, it will be "average sharp", and in 3 months, it will struggle to slice through a tomato skin. Why does it dull relatively quickly? I am not sure. I never cut hard objects, or cut against a hard surface, never drag across the blade, and never leave it sitting in contact with water, mindful of speeding up corrosion. And yet, it always seems to dull on a regular schedule, seemingly irrespective of how much cutting I actually do. I am tempted to hypothesize that the MCD67 simply corrodes by contact with air, once exposed out of the stainless sandwich. But I have not attempted scientific testing; I could be wrong on this. I'd suggest it will be a waste of your money, unless you are serious about caring for it. German-made Zwilling blades are softer steel, but will definitely stay sharper for much longer, and can be sharpened more easily. For most people, that's a better fit, so 4 starts from me, only for that reason. Myself, I very much like this knife. Can't say that MCD67 is something I couldn't live without, but when it's sharp, it is great.

This knife is well balanced and extremely sharp right out of the box. Miyabi is the brand of choice for my cutlery!
