Really sharp

Great for fine chopping

Right out of the box this knife is sharp and ready to use. The handle and lack of bolster make pinch gripping or just holding by the handle super easy. I really appreciate that the edges on the spine of the blade are so nicely rounded. It makes using it so much more comfortable for long prep sessions. The hollows make the job easier also. While cutting some large porcini mushrooms there was some sticking to the side of the blade, but very minimal. I have only had the knife for a couple weeks and use it with wooden (not bamboo) cutting boards so I can’t say for certain how long the edge will be retained but no dulling yet!
