I always wanted a good carving knife (I'm 77 years old). For my last birthday my daughter gave me a Classic Ikon Chef's knife, and it is wonderful - sharp and stays sharp. So finally I broke down and decided to buy myself a good carving knife, and I went to Wustof online. The Classic Ikon 9" Carving Knife is tremendous. It's the sharpest knife I've ever owned - cuts through meat effortlessly, and stays sharp. A bit pricier than I've paid for a knife in the past, but it's a great knife. Better to pay a bit more. You forget the price, but you don't forget poor quality. 5 Stars, for sure.
