Everyone should have a European style paring knife in their knife block. This is the knife to use when making small precise cuts, usually in fruits and vegetables. This blade shape has been around forever, with good reason. It works. There is nothing fancy about this knife, it is a no-nonsense design that works perfectly when cutting small items.
