How to Use a Double Boiler
Melting made easy.
When it comes to melting delicate foods or gently cooking, double boiling is the way to go. This cooking technique is easy and effective for getting delicious results without scorching or burning your food in the process. Having a double boiler on hand in your kitchen is helpful when times arise for gentle cooking times, but it’s important to know how to properly go about this method. Here’s everything you need to know about how to use a double boiler.
What Is a Double Boiler?
A double boiler is a cook or bakeware item that uses two pots to melt and cook food. The bottom pan is filled with water to boil while the top pan sits on top with your food of choice. Since one pan sits on top, the water in the bottom pan boils and steams to heat the bottom of the top pan to heat it and cause the food to melt or cook.
Tip!
If you don’t have a double boiler set on hand, an easy way to make a DIY double boiler is with a saucepan and a glass or stainless steel bowl. The glass and stainless steel material are safe enough for this cooking process and fit perfectly in the opening of the top of a saucepan.
Double boilers may seem easy to work, but knowing exactly how to go about this method is important for perfect results. Here’s how to use a double boiler for velvety melts and slow-cooked sauces.
Step 1: Fill Your Bottom Pot
Take the bottom saucepan in your double boiler set and fill with 1 to 2 inches of water. Do not overfill your bottom pot since the idea is not to have water actually touch the bottom of the top pot. Double boilers are meant for steaming which means you only need a little bit of water.
Step 2: Secure the Top Pot
Take your top saucepan in the double boiler set or your bowl and place on top of the bottom saucepan. When the pan or bowl is in place, add your ingredients from the recipe you’re making.
Step 3: Turn On the Burner
Turn the burner your set is on to a low simmering temperature, which provides the perfect steaming consistency. Once the bottom pot begins to heat and steam, the heat will transfer to the top pot and start the melting/cooking process.
Step 4: Stir Your Ingredients
Once your ingredients start to melt, stir them together until you’ve reached the desired consistency based on your recipe. Use a silicone spatula to keep the ingredients from sticking to the pan and your utensil. Once you’ve reached the desired consistency, turn the burner off and remove the top bowl.
Step 5: Refill Bottom Pan (If Necessary)
Some of the water from the bottom pan may evaporate during the steaming process. If your pot starts to run low as you heat the top pan or bowl, add more water if necessary until you’re done cooking.
What Are Double Boilers Used For?
As mentioned, double boilers are for delicate foods. Since the food in the top pan isn’t coming into direct heat, it causes gentle heating, which makes it perfect for melting chocolate since it is one of the foods that burn quickly with direct heat.
Double boilers can be used for other ingredients like butter or certain doughs that need to delicately steam and heat. If you’re a baker and love creating your own custards, you’ll find that having a double boiler in your kitchen is a very helpful tool!
