I bought this pan for my mother. She can't handle the weight of cast iron, and her steel pans perform poorly. I read reviews of several carbon steel pans, and the OXO 10" was the obvious choice. It weighs only 2.6 pounds, and gets high marks for its sloped sides, large cooking surface, non-stick performance, and cool, comfortable handle. This is a very small pan, which is exactly what I wanted. My go to pan was Farberware, and it is over 20 years old, horrible condition as it will not even fry an egg without sticking now. We are great cooks in this house and somehow we can still make our old pans work. BUT....This Viking pan is next level amazing. I see why its so expensive. It is heavy like a cast iron pan and I love love love that!! I cooked an egg in it without using any oil. Now I am obsessing and want a whole set. I just have to figure out a way to explain to my husband why we need 600 pots and pans lol. Maybe I can compare my pots and pans to some of those high end tools he has in the garage lol.
