Well balanced solid knife . Perfect size Works great for rocking

Most used blade in our kitchen. Has held up for years. Blades consistently sharp with a quick run over the steel after cleaning. 4 stars would be an insult to the piece of cutlery. It glides through both produce and meat like a figure skater across the ice. It has established its long term position in the kitchen right next to great grandma's cast iron skillet.

This is the knife I grab when I'm going to do a lot of rocking the blade back and forth for fine mincing. This blade has a very round geometry which encourages you to rock it. It works best on vegetables. It is a cool knife, but it doesn't see much action in my kitchen. There is nothing wrong with it per se, but I find that it has limited applications in a well appointed kitchen.

I can’t tell if it’s too curved or not curved enough but it’s in a weird middle spot

We had a problem with the handle of another of our knives that broke at the rivet. I was please to find out that the Wusthof company has a lifetime warranty and stands by their word. They honored the defective handle and we ordered the hollow edge Chai Dao. It came to our home quickly and was VERY sharp and a well made knife. We have been using it in our kitchen and are falling in love with it.
