You get to know the long tradition of Japan’s artisan knife craftsmanship. Here, every kitchen knife fascinates with its beauty and sharpness. This also applies to this, with a 200 mm blade length. Its blade is honed on both sides, making it ideal for cutting meat and preparing large vegetables. Special FC61 steel that undergoes twofold ice-hardening is used for the blade. Its quality is demonstrated in its great hardness, and it is also able to withstand plenty of strain. The Katana-edge cut belongs to the tradition of master knife craftsmanship and is found on the blades of Japanese swords. The aesthetics of a Japanese chef’s knife is also always seen when looking at the handle. With the 4000FC, the handle and bolster have an octagonal form. This turns the knife into a safe and comfortable instrument. Also contributing to the stylish appearance is the mosaic pin in an impregnated, dimensionally stable Pakka wood handle. It manufactures all knives at its own production site in Seki, Japan. Here German engineering expertise meets the finest East Asian craftsmanship.

This is a beautifully crafted knife. The blade is beautiful and made with the devotion that Japanese craftsmen are famous for. The wooden handle is a lovely dark brown and fits nicely in my hand. This is more than a kitchen knife, it is a piece of art and deserves special care. No dishwasher, dry immediately after use and store such that it won't nick you or be nicked by other cutlery.. MIYABI Iki is the uncompromising Japanese chef’s knife for those who demand peak performance—crafted in over 130 steps by specially trained master artisans. The 49-layer blade made of ultra-hard MC66 steel features the exclusive Moonlight Damascus pattern—designed specifically for the Iki series—and showcases an artful grind. The hand-shaped handle made of dark maple wood is perfectly balanced and precisely matched to the blade. Whether meat, fish, or vegetables—this chef’s knife is a top-tier all-rounder and a true statement of uncompromising quality.

It has a fine carbide steel core which gives the knife very good initial sharpness and cutting-edge retention. The core is embedded in 48 layers of steel which create each knife’s unique Damascus design. The symmetrical cutting edge is Honbazuke honed. This three-stage grinding, sharpening, and polishing process gives the knife razor-like sharpness. The entire length of the edge can be used to cut as there is no finger guard. The joint between the handle and bolster is completely smooth, which helps to prevent calluses from forming on the thumb and forefinger and gives a comfortable grip. Hand wash only for the best care and avoid cutting on glass, ceramic, or stone boards as these will prematurely dull the edge. Maintain and sharpen using whetstones.
