Fruits and veggies cut with a metal knife tend to turn brown fairly quickly (called oxidization); but with a Ceramic knife, it's much slower if it happens at all! In a recent test comparison of Peterson Housewares ceramic knives vs. metal knives, oxidization took twice as long compared to Metal knives tested. Ceramic knives start out much sharper than more expensive metal knives, and stay that way much longer! Compare retails of a decent metal knife to Peterson housewares ceramic knives, and you'll really appreciate the ceramic benefits.

I need time to acclomate to the curve in my hand and usually have to chop, dice, mince and cut much slower than normal making cooking a nuisance rather than a pleasure. I was off and running right after opening. I gave it a test to see how sharp it was before using my knife sharpener. I was very happy with the sharpness and even more impressed after sharpening. I was making a large meal with lots of prep work and it was a breeze. I cook 7 days a week so having a great knife in the kitchen is very important to me. I have varying price points on my knives which I choose to describe as orphans as they are all different brands. This one can hang with the more expensive brands and it looks as nice as well. I have a mother in law that seems to “have everything “, so it makes it very difficult to buy gifts for her for Christmas. I ran across this beautiful looking bamboo bread knife and knowing she loves to cook and bake bread I figured that this might be ideal for her. I was a little suspect when I held the knife, it is VERY light, not sure how it might handle a loaf of sourdough bread.
