I work in a fish shop.. we got 4 of these on standby.. I love the blade stifness for filletting.. for deskinning its a bit hard maybe but u get used to it. I wish the finish on the back of the blade would be a bit smoother so id get a little less wear on the fingers.. other than that its a perfect blade more than adequate for occasionally filleting some fish..

This boning knife is excellent and light weight. It feels good in the hand and cuts meats superbly. At times I use it to cut tomatoes, as well. I have regularly used this knife and five others purchased with a block for over 4 decades. When my granddaughter married recently, I purchased a set for her.
