Merten & Storck has engineered cookware with exacting precision since 1873. The Carbon collection is made of black carbon steel, a versatile, dynamic material that heats ultra-fast, is half the weight of cast iron, and is just as durable. Pre-seasoned to get you started right away, Carbon develops a naturally nonstick patina layer over time that makes it ideal for frying fish, crafting omelettes, and getting a perfect sear without a messy cleanup. This versatile roaster delivers family-sized meals with ease. Perfect for searing on the grill or roasting in the oven, this spacious roaster fits a whole turkey or chicken. The stainless steel roasting rack is dishwasher safe and lets air circulate to promote even heating while lifting food out of liquids in the pan. The lightweight design makes it perfect for camping and outdoor cooking. Carbon performs on all heat surfaces and can stand up to direct heat and grill cooking. Hand wash only.

Only used it once - just arrived yesterday. I used a green scrubber to remove the protective coating - a plain sponge with hot soapy water didn't seem to do much. Might have taken some of the preseasoning, too. If there's a CS pan without a coating (because it's nitrided?), I'd probably go for that next time.. Anonymous. Fri Aug 28 2026

Nonstick finish easily releases foods cooked without fat. Distributes heat evenly on gas and electric ranges. Maintains a steady simmer.

Like cast iron, but better. the best-selling Carbon Steel Frying Pan, seasoned with a mixture of shea nut oil and coconut oil, we’ve taken care of the first two seasonings (the hardest ones) so you can experience the difference Carbon Steel makes on day one. the Carbon Steel combines the heat retention of cast iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative. We stamp Carbon Steel into a thin disc that’s half the weight of cast iron but every bit as durable—so it seasons faster, responds quicker, and is rugged enough for the grill or open flame. With sloping walls and a wide surface, this pan provides maximum heat contact for high-heat searing. See how this chef-loved pan will replace cast iron as the favourite kitchen heirloom.

My favorite pan to cook with by far!. Lee. Philadelphia, PA. Sun Sep 20 2026

A frying pan with a silicone grip will quickly become your go-to workhorse. You won’t believe how durable and versatile it is. Reach for it to prepare evenly seared steaks, stir-fried vegetables, or scrambled eggs for one, or pop it in the oven to bake your skillet cookies and cobblers. The pan’s unique carbon steel construction makes it one of the most durable pants you’ll own. Carbon steel can handle high temperatures for perfect searing, and it can go from stovetop to oven with ease. The finishing is Nitro Carbonized with Natural Oil Finish. A riveted steel handle with a removable silicone sleeve gives you easy control and protection.

This black steel cookware is made to exceed your high standards for durability, longevity, performance, and hygiene in professional and home kitchens alike, making it a Matfer Bourgeat classic! This black steel pan brings top-notch heat distribution and temperature control, preserving the vitamins and nutrients in your foods perfect for your paella creations. This pan is available in a choice of 3 sizes, each sold separately. Manufactured in France, the 3mm thickness of this pan additionally ensures temperature control for even and consistent cooking of your dishes. Black carbon steel is a natural mineral material promoting healthy cooking making this pan free of any harsh chemicals or coatings and is PTFE and PFOA free. The high quality, steel handles assure further durability, as it is welded to its body for extra strength and security, while its curved sides and a wide and shallow cooking surface designed to saute meats and vegetables prior to adding rice. The handle's construction is also free of rivets, preventing bacteria from being trapped certifying sanitary use. This steel pan can also withstand and maintain exceedingly high temperatures, as it can be used on all hob and stove types, even induction. It's also oven and dishwasher safe making it the ultimately compatible and versatile pan! Once seasoned this chef's favourite fry pan becomes naturally non-stick, so much so that your foods will slide right out of the pan. Before your first use, you must season this fry pan and remove its natural, protective beeswax finish, possibly up to 6 times depending on the thickness of the protective coating.

Season it exactly as instructed, then used it right away. I made paella and it turned out pretty good. It will take a couple tries to get it perfect, but this is the right pan for the job. Heat stayed even. The handles also get hot so definitely need something over them when touching them. And of course its heavy, especially when loaded up so be prepared for that.. Elissa. Like a good friend, this nonstick stir fry pan wants to make life easier for you. Its slick Xylan coating shrugs off burnt food and stuck gunk with ease. This means you can skip the preliminary puddles of oil and butter to make meals healthier. This also means that it’s a champ when it comes to cleanup time so you have more time after dinner for me-time. It’s flexible too, doing just as well with stir fry as with pancakes or scrambled eggs. Underneath the coating, this pan is carbon steel, a stronger and lighter alternative to cast iron and known to handle heat with no hot spots.

Dont buy this one. Cheap quality. The paint ripped off when we were heating the pan. Anonymous. Sat Oct 07 2023

Working on your pan flip? Toss stir-fry veggies into the air with ease using this carbon steel wok that’s lighter yet stronger than cast iron. That carbon steel heats quickly and evenly, so there are no hot spots that might scorch the broccoli while the peapods wilt. Unlike its rounded-bottom relative, this stir-fry pan’s flat bottom keeps it balanced on the stovetop without any additional accessories. This pan must be seasoned often, meaning that the more it’s used the better it performs.

The Alva Artist Carbon Steel Frying Pan Set is hand-hammered, and that is not decoration — the dimpled surface breaks up contact with the food slightly, helping release as the seasoning builds. Both pans arrive pre-seasoned and ready to cook, and carbon steel does what stainless and nonstick cannot do together: it takes real high heat for searing and develops a naturally nonstick patina that improves with every meal rather than wearing out. There is no synthetic coating to scratch or replace, so metal utensils are welcome. Oven safe to 500°F and compatible with every cooktop including induction. Hand wash, dry immediately and wipe with a little oil. Available in 9.5 and 11 inches and as this 2-piece set. Made without intentionally added PFAS, PTFE or PFOA. Backed by a limited lifetime warranty, built in the Belgian tradition since 1949.

The Alva Forest Carbon Steel Frying Pan is for cooks who would rather build a nonstick surface than buy one. It arrives pre-seasoned and ready to use, and every meal after that deepens the patina into a release that keeps improving instead of wearing out — there is no coating here to scratch, blister or replace. Carbon steel heats fast and responds the instant you move the burner, which is what makes searing, sautéing and browning feel precise rather than approximate, and the acacia wood handle stays cool and comfortable in the hand. Works on gas, electric, ceramic, glass and induction. The wood handle is not oven safe, so keep this pan on the cooktop. Hand wash, dry immediately and wipe with a little oil to maintain the seasoning. Available in 8, 9.5 and 11 inches and as a 2-piece set. Made without intentionally added PFAS, PTFE or PFOA. A steak needs a pan that does not flinch. The Alva Black Angus Carbon Steel Frying Pan comes pre-seasoned and ready to sear from the first use, and carbon steel is what makes the crust possible: it takes high heat without complaint and holds it when cold meat hits the surface, where a thin pan would drop temperature and steam instead. Oven safe to 500°F with a stainless handle, so you can sear on the burner and finish in the oven, and compatible with every cooktop including induction. Hand wash and dry immediately. Available in 9.5 and 11 inches and as a 2-piece set. Made without intentionally added PFAS, PTFE or PFOA. Backed by a limited lifetime warranty, built in the Belgian tradition since 1949.

I like these pans a lot, they heat quickly, evenly and have a great non-stick finish (though I seasoned them when we first got them and dry them on the stove top with a little oil immediately after cleaning).
