We really like the flat blade for cutting. We started with a Chef's knife which has a rounded bottom and required rolling the blade down, then we upgraded to a Santoku blade which was flatter but still curved near the tip. I saw this one and had to try it. Completely flat blade like a mini-cleaver. Great for chopping and slicing. MIYABI 5000MCD 67 Santoku, 18cm blade. This Japanese santoku has an extremely hard MicroCarbide powder steel core for excellent cutting edge retention and sharpness. Santoku is the best-selling Japanese blade shape and the name translates as "Three Virtues", these being meat, fish and vegetables. The flat cutting edge lends itself to a chopping motion rather than the rocking cutting movement of European chef's knives. The blade core is surrounded by 132 outer layers of steel which make up the unique Damascus-design pattern on the blade. The cutting edge is Honbazuke-honed and symmetrical (not single bevel), so can be used by those both right and left-handed. There is no finger guard so the whole length of the cutting edge can be used. The black Ash wood handle sits comfortably in the hand, allowing firm control and tireless working. As with anything this special, care should be taken. It's recommended to hand wash only, maintain and sharpen on a whetstone and using glass, ceramic or stone cutting boards should be avoided.

I have used Zwilling knifes for 50 years. Mt afather was a chef and I have inhrereted and still use a carving knife and butcher knife from this brand that are over 60 years old, and can still hold an edge. This is the Sharpest Knife I have ever used. The blade is so fine, you can feel the edge catch on your fingerprints when you drag a finger over the blade (perpendicularity of course). Was very sharp when I received it, but I am finding it starting to lose that brand new sharpness already and it hasn't even been a month of use. And also, the smaller knife already has a chip on it, so I will be returning them and maybe purchase a different set/style of the Miyabi as I do like the Miyabi line but the Artisan is not holding up to it's name..
