When determining which size baking sheet you'll need, consider the type of dish you'll be preparing and how large your oven is. We've highlighted the four most popular baking sheet sizes so that you can choose the right one for your culinary creation.
Full Sheet
Commercial Oven Size (18" x 26"): Way too large for a standard-sized home oven, these full-sized sheets have 1” sides and are made to mostly fit commercial ovens in restaurants or bakeries. Even though full sheets are best suited for commercial ovens, this sheet pan size could also be used for storage, organization, or ingredient prep.
Half Sheet
Standard Home Oven Size (13" x 18"): The first pan that comes to mind when you think baking sheet, this is half the size of the full sheet and is made to fit most home kitchen appliances, including convection ovens. Best for roasting vegetables because of their high 1 in. sides, it's worth having at least two of these baking sheets to keep in rotation.
Tip!
Avoid baking cookies on half-size baking sheets because the high sides won't allow the cookies to properly bake through. Instead, use a cookie sheet with one slanted side for easy removal with a spatula.
Quarter Sheet
Medium Size (9" x 13"): This baking sheet size is perfect for scaling down recipes and making smaller portions. Great for one to two people, the quarter sheet is small enough to fit multiple in the oven at once so you can conveniently roast potatoes and a small chicken at the same time. It's also very functional for toaster ovens, separating in the freezer, or drying out ingredients in the fridge.
Eighth Sheet
Small Size (6.5" x 9"): These small sheets are perfect for direct oven-to-table serving. Not only do they let you cook multiple things in the oven at once, they can also function as trays for messy meals like barbeque or nachos. Eighth sheets are also great for toasting small quantities like nuts or breadcrumbs. Small enough to fit in a toaster oven, these sized sheets are handy to keep around.

If you plan on using multiple baking sheet sizes, opt for a set of baking sheets that include the most popular sizes.
It may seem pointless to have difference sheets for different occasions when they all appear to do the same thing, but in the end it could make a difference in how your food comes out. Invest in multiples of each of these baking sheet sizes and never worry about having to sub in the wrong pan for the job.
