MIYABI 5000 FCD Gyutoh, 16cm blade. The gyutoh is the chefs knife of the Japanese kitchen, used as a general purpose knife for preparing larger cuts of meat and vegetables. The blade core is made of hard fine carbide steel for very good initial sharpness and cutting edge retention. 48 layers of steel surround the core and make up the Damascus design of the blade. A three-stage grinding, sharpening and polishing process called Honbazuke honing gives the knife a razor sharp cutting edge. There is no finger guard so the whole length of the cutting edge can be used. The edge is symmetrical (not single bevel) so can be used by those both left and right handed. The smooth join between handle and bolster helps to prevent calluses forming on thumb and forefinger. For best care, wash by hand, and maintain and sharpen using whetstones. Avoid using glass, ceramic or stone cutting boards as these will dull the cutting edge.

All lovers of crispy roast duck or delicious fried chicken will love the Twin select poultry shears. Because it makes it easy to portion poultry of all kinds. The well-thought-out design of the poultry shears starts with the ergonomic handle, which allows you to safely use the shears without tiring your hand. The shears provide an ideal leverage effect and a good transmission of power. Thanks to the bone crusher and serrated blade, you can cut meat, tendons, and even bones easily and cleanly. The serration prevents the food from slipping, which makes work even easier. With a short, powerful squeeze, you can cut quickly and cleanly. This is especially helpful if you use the shears for portioning and serving. In the case of the twin select poultry shears, the spring is on the inside for the first time. This prevents it from jumping out. And if you no longer need the shears, they can easily be taken apart and cleaned by the detaching mechanism.

The knife is a Japanese slicing knife with a hand-forged blade made of 100 layers of different types of steel. The micro carbide MC63 powder steel blade core is embedded in layers of two different kinds of steel. The blades created in this way are extremely hard and easily recognized by their striking floral Damask pattern. The high-quality materials and their elaborate manufacture make them a very durable knife. Both the 24 cm blade and the handle are characterized by an attractive appearance and as well as functionality. The ergonomic handle is made of the very best Masur birch, which blends perfectly with the high-quality steel blade. This is ideal for cutting meat and fish or for slicing a roast. Its scalpel-like sharpness is due to a unique honing technique. The blade is first sharpened by hand twice on rotating stones and is then polished on a leather wheel.
