My wife liked a smaller santoku from our crummy knife block because it fit well in her hand and was more comfortable to use than my chefs knives but it was duller than Trump supporters. I decided to purchase this when it was on sale for a gift since Shun has a good reputation with their knives. It came plenty sharp and looks really nice on our magnetic knife strip with some other Japanese steel from my collection. My only gripe is that it doesn't hold its edge as long as I'd hoped it would. Fruits and veggies cut with a metal knife tend to turn brown fairly quickly (called oxidization); but with a Ceramic knife, it's much slower if it happens at all! In a recent test comparison of Peterson Housewares ceramic knives vs. metal knives, oxidization took twice as long compared to Metal knives tested. Ceramic knives start out much sharper than more expensive metal knives, and stay that way much longer! In our kitchen, time is marked by either before scissors or after scissors. And at this point, the time before we were using scissors in our kitchen (to cut carrots, cheeses, bacon, chicken, hard-boiled eggs, and pretty much anything else) feels downright prehistoric.
